CHOY (choi) is the Chinese word for greens (菜), but it’s also a word that refers to any dish you eat. A salad is choy. A pizza is a choy. Bokchoy is a choy.

Each episode of CHOY takes us into the kitchen and back to our roots, following one food item (or choy) on its journey from seed to table, featuring the resilient communities who have cultivated this food for survival. How have transplanted people, through choice or force, shaped American soil and appetites? What has a global pandemic revealed about our dependence on migrant labor and the vulnerabilities of our food supply chain? And how do we empower people to embrace the ingredients they find most foreign in their supermarkets?
